InSaNiS - 

InSaNiS started this past week and it was really fun.  Ingrid and I worked through the massive amount of logistics for this one-off dinner that takes place on Saturday's through September through November.  I think it was a success as the guests booked again!  

Upon booking you will receive a questionnaire that will shape the menu throughout the evening.  There are 8 seats per seating and it will take place at a different location every time.  There are supplements built in where you can even stay the night and I will come back the next morning and cook you breakfast. Yup!

I'm taking the Silva menu on the road to different areas in Washington in 2019.  The menus will depend on the location 

The trip itself is designed to have a chill feel so sit back, relax, and let us take care of you the entire way.   Pricing will be $1750 per person for the entire weekend that includes accommodations, food, and beverages.  There will be a maximum of 6-8 people per place we will stay at so tickets will be limited.  Get some friends and book the whole thing!

Private Parties and Holiday Parties - 

With Capitol Hill going away that has opened up a little more of my time to work on some more projects, there are a lot in the air at the moment and we'll see how they turn out!  However, now is the time to start planning those private parties and holiday parties.   I haven't planned NYE yet, hint hint. 

We have been doing a few private parties here and there from Lechoncito to super duper high-end things.  Plain and simple, we do a lot of things here so if you have an event in mind or are in the early stages of planning give us a shot.  Email me directly,

addo:incubator:ballard news - 

Now that we have moved out of the Capitol Hill space we are changing the format of Ballard to represent more of what addo is known for, random and fun events! So with that, here are some changes that will help make room for those events.   

addo:incubator will be open Monday-Friday from 7am-3pm for breakfast and lunch and Saturday and Sunday from 9am-3pm for brunch to the public. Night times will have ticketed experiences that will be changing just about every night. We will also have a walk-in menu on the nights of those events that will be limited and will highlight the larger projects that I am working on, Richard, Puerto Rican food, and hyper seasonal specials.   This move has been pushed forward from feedback from our return guests that want more variety and like how addo is always up to doing different things. Additionally, mid-day happy hour is not a thing in that space, which is unfortunate, but it doesn't make sense to keep doors open for two hours a day when nobody is coming in. 

The events will range in price from free to attend to a few hundred dollars per person so there is something for everyone at any price point.  

We made a spreadsheet that you can click on that is in chronological order for all the new events and experiences we just added, it's a lot. You'll see some old favorites like Hawaiian brunch and beefsteak as well as lots of new concepts.  Scroll through and pick out things that sound rad and buy as many as you like!

Lechoncito 2.0 

I was doing straight down the middle food for Lechoncito for a while.  I don't think any of it was creative or that exciting considering it was more about getting groups of people together to dine and chill like you were going to someone's house in Puerto Rico.   So I did that, now I'm onto something else so here we are. 

Lechoncito 2.0 will feel a bit more refined.  This will be my interpretation of Puerto Rican food.  The stuff I grew up eating, on a level, mixed with techniques and visuals I like to use.   What does that mean?  Puerto Rican food in Seattle doesn't really exist.  There is one restaurant, La Isla, which has been around for a while and many people identify with that place as being their source for Puerto Rican food.   I think that's great.  What I don't like about that arrangement is there is one Puerto Rican restaurant in Seattle..... Why can't there be others?  There are many different styles of Puerto Rican food, people that make it, and plenty of recipes to be shared.  Lechoncito 2.0 is less about being what's known about what Puerto Rican food is and more about what I bring to the table.  Am I reinventing the wheel? Maybe. Is it just me putting expensive ingredients with Puerto Rican flavors?  Sometimes....  Will there be new ideas floating around?  Yes! "The concept is called DIS. It’s the word push in Latin. The cuisine is pnw meets Mexico. I am Mexican American from Tucson, AZ. I moved  to Seattle a little over a year ago in hopes to push myself food wise. I am currently the chef at Brimmer and Heeltap and the food is a hit. I overhauled the menu taking it from far east to far south. It has been a hit with the returning customers. I want to take it further and more adventurous. That’s where addo comes in.

LECHONCITO: Puerto Rico Edition

Lechoncito will be going to Puerto Rico next March.  You should join us.  Will be a maximum of 12 people.  I'll be taking you on a tour of the island with eats, treats, drinks, and cooking you food as well.  I'll be posting details for this soon.
