InSaNiS has started to book more and more so don't miss out and book your date soon. There are very limited reservations and seats per time so plan ahead and be part of the most exclusive tasting menu in the city. Booking from now through November on Saturday's and will be in a different location every time. i have received requests to do InSaNiS on days that aren't on a Saturday. Yes, that is a possibility, I will do them for a group of 8 min/max, and if there isn't something else already booked on that you request.
Upon booking you will receive a questionnaire that will shape the menu throughout the evening. There are 8 seats per seating and it will take place at a different location every time. There are supplements built in where you can even stay the night and I will come back the next morning and cook you breakfast. Yup!

LECHONCITO: Puerto Rico Edition
Lechoncito will be going to Puerto Rico next March. You should join us. Will be a maximum of 8 people (2 tickets left!!!). I'll be taking you on a tour of the island with eats, treats, drinks, and cooking you food along the way. 4 of the tickets are already accounted for so make sure you book this one up soon. Stephen Bitterolf, a boutique German wine importer, is America’s most dynamic voice for German wine today. He’s also the mastermind behind Rieslingfeier, the annual New York City celebration devoted to German wine.
A passionate advocate for Germany's culture of winemaking, Stephen will be in Seattle for one night only to share with you wines from his portfolio from cult producers such as Weingut Keller, Peter Lauer, and Uli Stein.

Cafecito, our new coffee program launches on Monday! We have all-new cold brew, a new coffee purveyor Olympia Coffee, and lots more in store along with reduced prices for coffee now that we have fully transitioned.
The Main Stays:
On Friday's I'll be doing 12 course dinners on at addo:incubator in Ballard. The price is $140/pp and that includes service charge but not tax or beverage pairing. There are only 6 seats per seating so book it. (click)
Is booking now in Ballard on Wednesday and Sunday nights. Lechoncito 2.0 is a little more elevated than the previous version of Lechoncito. This version features individually plated items as well as a few rotating family style dishes. The menu changes every week and there are order ahead supplements that allow you to dial in your experience even further. October will be the last month for Lechoncito in its current form, frankly, it just doesn't sell well in Ballard so onto something else. I'll be doing more one-off themes for Lechoncito moving forward in November.
As you can tell from our event list the focus with dinner is to have more unique nights and go more towards tickets only. After mid-October, all of our dinners in Ballard will be available by ticket only. It's how I've always done things and I was able to do it successfully so why change it to open for walk-ins for dinner? No mas. Tickets is the only way to go. We have a couple more weeks left for dinner service so book it before I add more themed ticketed nights! (click)

"The concept is called DIS. It’s the word push in Latin. The cuisine is pnw meets Mexico. I am Mexican American from Tucson, AZ. I moved to Seattle a little over a year ago in hopes to push myself food wise. I am currently the chef at Brimmer and Heeltap and the food is a hit. I overhauled the menu taking it from far east to far south. It has been a hit with the returning customers. I want to take it further and more adventurous. That’s where addo comes in.
New Year's Eve
New Year's Eve will be a 7 course tasting menu of luxury ingredients. There will be two seatings and they will be off-site in the Seattle region, the exact address will be shared two weeks prior to NYE.
Here is the breakdown:
Early Seating - 7 course tasting Menu, $225 per person (plus 20% service charge and tax). Beverage Pairing at $105 and n/a beverage pairing at $55. 8 tickets maximum. This will run from 6pm-8pm.
Countdown Seating - Cocktail party with bites, plus 7 course tasting menu, and late-night snack time, $650 per person (plus 20% service charge and tax). This includes beverage with additional beverage supplements available. 10 tickets maximum. This will run from 9:30pm-whenever. Couples can choose to stay the night, as a supplement, and you'll get breakfast in the morning by me before checking out at 11am.

Rad idea, find 7 more friends and book the whole thing to yourself on the early or the countdown. Even radder, book all 18 seats and take over the whole night.

The trip itself is designed to have a chill feel so sit back, relax, and let us take care of you the entire way. Pricing will be $1750 per person for the entire weekend that includes accommodations, food, and beverages. There will be a maximum of 6-8 people per place we will stay at so tickets will be limited. A new long tasting menu
A new flagship menu is in the works. off____menu will be a new menu that looks at classic recipes and burns them to the ground with an evolved flair. It will be a 15-20 course menu that will happen on Saturday's starting at the end of January.
