Marco Antonio Baldoceda Cordova, aka Chino, was born and raised in Lima, Peru. Studied Hotel & Restaurant management at San Ignacio de Loyola, Lima Peru. And later on culinary arts at Le Cordon Bleu, Seattle, WA.
Chef Marco moved to New Jersey when he was 19 years old and enjoy the different cultures, later on 2009 had the opportunity to work at
Costa Cruises where he visited cities from Norway to Egypt. When started to understand different ways to eat, to cook, to enjoy, was an open minded experience.
Chef Marco loves music (Salsa, Bachata, 80's Rock, 90's, Hip Hop), food, soccer, rugby and loves to travel and drive. He aims to be a Peruvian chef and ambassador of his people and culture.

Eric Anderson is a professional chef who strives to create food that is accessible and intriguing. With two decades of cooking in restaurants, some of which are among the best in the world, Eric understands the quality of ingredients and the thoughtful palate it takes to produce delicious food. He believes in cooking food that is current - without being trendy. His goal is to connect with the guests through the stories of the ingredients and pleasantly surprise them with the flavors.
Eric and Brunswick & Hunt were recognized as one of the “8 most underrated restaurants throughout Seattle” by thrillist.com, and one of the “top 10 seriously underrated restaurants in Seattle” by eater.com.
With Eric as the chef, Brunswick & Hunt has achieved a 4.5 star rating or higher on yelp, Opentable and google reviews. In addition Eric has worked at Palace Kitchen in Seattle, spent a life changing 5 years working for Greg Higgins of Higgins’ in Portland, OR, ran Besaw’s Cafe in Portland, OR for 3 years and has also staged at Michelin starred restaurants - le Bernardin, Alinea and Charlie Trotters’.

George's BBQ ft. Chef Gavin Georgitsis
George’s BBQ was never intentional, Chef Gavin (the 17 year old sensation) just wanted to cook brisket and needed some people to feed it to. After giving some away a few weeks in a row, people were willing to pay to reserve their piece of the meat. Naturally, Gavin knew he had something going and started to sell to friends and pretty soon they were at max capacity on their little backyard smoker. So they took a break from selling, went to farmers markets across Washington, seeing if they could find any quality BBQ at these markets, we found none. So they built a smoker from scratch with help from his grandpa and decided to set up at The Puyallup Farmers Market since then they have sold out every weekend and haven't looked back.
“We did not expect this instant success, our menu prices were a little higher than the other stands, we weren’t even sure if people would know what Brisket was, we thought people would mistake the dark, rich, smoky crust for being burnt and charred. We were wrong, and we were quickly embraced by a hungry community deprived of great BBQ, and we can not thank them enough for all the support.

Washington state native, Charlotte Glaves is a young and talented upcoming chef inthe city that has been featured in many local publications and was named one of Zagat Seattle’s 30 under 30 industry professionals. She has worked as an executive chef in this city for some of Seattle’s best hotel restaurants and catering halls. Most recently, she has taken on a culinary lead roll in addo’s incubator program, and works with up and coming chefs on helping them developing their chef skills (costing. purchasing, service, and menu creation) and teaching culinary classes and foraging classes in partnership with addo.
